phase 01

Weigh and grind the coffee, prepare the filter

Weigh out the Coffee Costadoro beans (we recommend 18 g for 300 ml) and obtain a coarse grind. Wash the Chemex filter (if paper) using hot water to remove the papery smell. Pour off the water that has collected in the Chemex carafe.

Brewing coffee in the Chemex

Place the Chemex on the scales and put two small pieces of carefully washed orange peel or a few spices in the bottom of the Chemex to bring out the coffee aromas. Then pour the ground coffee into the filter, and level it off.

Begin filtering: il blooming

Pour enough hot water (preferably filtered or bottled) in a circular motion over the ground coffee so that no dry powder remains. Now you will notice a few bubbles forming and this is the sign that the carbon dioxide is being released, inflating the coffee and allowing the water to moisten evenly. Blooming lasts for about 30 seconds.

Finish filtering

Filtering is completed by pouring in the rest of the water. Total percolation time will vary from 3 to 5 minutes depending on how finely the beans have been ground, the amount used and type of filter.
